Flavoured with lots of garlic, anchovies, Worcestershire Sauce and parmesan cheese, this traditional Caesar dressing is great poured over Cos Lettuce, crispy bacon, garlic croutons and shaved parmesan cheese. This dressing is also delicious with grilled chicken and sliced tomatoes.

 


Recipe - Traditional Caesar Dressing

Tear some washed cos lettuce leaves and place them in a bowl.  For home made croutons, chop some day old sour dough bread into 1 cm pieces and place in a bowl.  Sprinkle some extra virgin olive oil on them and bake in the oven heated to 180 degrees until crisp. Slice up some bacon and fry until crisp. With a potato peeler, shave some parmesan cheese into a bowl.  To plate up, place the cos lettuce in a shallow bowl.  Sprinkle with croutons, bacon and then drizzle with Doodles Caesar Dressing.  If too thick, add some boiled water to the dressing to thin it down.  Finish the salad with Parmesan Cheese shavings and some anchovies, if you like.
