Blue Cheese Dressing 

 
 

 

The mild hint of blue cheese makes this a fabulous dressing to serve with a rocket salad with pears, walnuts, figs and prosciutto. Also delicious drizzled over steamed potatoes with crispy bacon strips.

 


Recipe - Rump steak with Blue Cheese dressing and rocket salad

The secret to the perfect Barbequed steak, according to Rob is buy it at least 5cm thick and then to marinate it with garlic, thyme and extra virgin olive oil.  Take it out of the fridge for at least one hour before cooking.  Heat the BBQ up to hot and smoking and then place the meat on the BBQ. Leave the meat for one minute and then turn the heat down to med-low and put the lid down.  For rare, turn the meat after two minutes and cook for another two.  For medium, cook the steak for three minutes each side and for well done cook the steak for four minutes each side. Rest the steak for one minute before serving. Serve with rocket and Blue Cheese dressing.
